Easy Strawberry Pie recipe!

Ingredients:

  • 1 baked pie crust
  • 1 quart fresch strawberries
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 3/4 cup water
  • whipped cream
  1. Arrange half of strawberries in baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
  2. In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over berries in pastry shell. Chill for several hours before serving.  Serve each slice of pie with a dollop of whipped cream.

La più semplice e deliziosa strawberry pie da preparare!

Ingredienti:

  • una crosta per crostata già pronta di circo 22 cm
  • 4 bicchieri e 1/2 di fragole
  • 1 bicchiere di zucchero
  • 3 cucchiai di amido di mais
  • 3/4 bicchiere di acqua
  • panna montata

Mettete metà delle fragole tagliate a pezzi nella crosta. Schiacciate le fragole rimanenti e combinateli con lo zucchero in un pentolino. Mettetelo sul fornello e portate a ebollizione mescolando spesso.

In una piccola ciotola amalgamate l’amido di mais e l’acqua. Incorporate gradualmente la miscela di amido di mais dentro il pentolino con le fragole. Abbassate il fuoco e fate addensare per circa 10 minuti. Versate il composto sopra le fragole nella crosta e ponete in frigo per qualche ora prima di servire. Servite ogni fetta con panna montata!

Strawberry White Chocolate Cookies…. made from scratch!

Ingredients:

1 1/4 cup all-purpose flour

1/2 teaspoon baking powder

1/8 teaspoon salt

1/4 cup unsalted butter-softened

4 oz cream cheese-softened

3/4 cup sugar

1 egg

1 teaspoons vanilla extract

3/4 cup chopped fresh strawberries

2 tablespoon lemon juice

1-2 tablespoon flour

5 oz white chocolate-chopped

sanding sugar

  1. Preheat the oven to 350 F and line pans with parchment paper.
  2. Pour fresh lemon juice over chopped strawberries, drain them after a few minutes.
  3. Whisk together 1 1/4 cup all-purpose flour, salt and baking powder and set aside.
  4. Beat butter with sugar and cream cheese until it’s light and fluffy.
  5. Add egg and vanilla and mix well.
  6. Gradually add flour mixture and mix until it’s well combined.
  7. Stir in chopped white chocolate.
  8. Sprinkle strawberries with 1-2 tablespoon flour, toss them until all strawberries are coated with thin layer of flour and then stir them really gently in the batter.
  9. Drop heaping tablespoon of batter onto pan leaving an inch space between.
  10. Set the cookies in the refrigerator for 5-10 minutes before baking.
  11. Sprinkle the cookies with sanding sugar if you want, but do not overdo it because they are sweet enough.
  12. Bake for 13-15 minutes( until the edges become golden brown).
  13. Let them cool a few minutes in the pan than transfer them to a wire racks to cool completely.

Ingredienti:

1 1/4 tazza di farina

1/2 cucchiaino di lievito in polvere

sale 1/8 cucchiaino

1/4 tazza di burro non salato, ammorbidito

1/2 tazza crema di formaggio, ammorbidito

zucchero 3/4 di tazza

1 uovo

1 cucchiaino di estratto di vaniglia

3/4 tazza di fragole fresche tritate

2 cucchiai di succo di limone

farina 1-2 cucchiai

1/2 cioccolato bianco tritato

zucchero granulato

 

Preriscaldate il forno a 180°c e coprite una teglia con carta da forno.

Versate il succo di limone fresco sopra le fragole tritate, scolarli dopo pochi minuti.

Lavorare insieme 1 1/4 tazza di farina, il sale e il lievito e mettere da parte.

Montate il burro con lo zucchero e formaggio fino a diventare spumoso.

Aggiungere uovo e la vaniglia e mescolate bene.

Aggiungere gradualmente farina e mescolare fino a quando è ben combinato.

Aggiungere a questo punto il cioccolato bianco. Aggiungete una paio di cucchiai di farina alle fragole, poi aggiungete le fragole all’impasto.

Con un cucchiaio disponete porzioni dell’impasto sulla teglia e ponete nel frigo 10 minuti prima di infornare.

Potete coprire i biscotti con un po’ di zucchero prima di infornare.

Infornate per 13-15 minuti e lasciate raffreddare completamente.

  • 3 ½ cups all-purpose flour
  • 1 ½ cups sugar
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 4 eggs, beaten
  • 1 ¼ cups canola or coconut oil
  • 2 ½ cups fresh strawberries, sliced and slightly mashed
  1. Preheat oven to 425◦.
  2. Combine dry ingredients in large mixing bowl.
  3. In small bowl, combine eggs and oil.
  4. Stir strawberries into egg mixture.
  5. Blend in flour mixture until thoroughly combined; but do not over beat.
  6. Spoon into greased muffin tins until nearly full.
  7. Bake at 425◦ for 5 minutes.
  8. Reduce heat to 350◦ and bake an additional 15-19 minutes or until a toothpick inserted in center comes out clean.

INGREDIENTI:

  • 3 e 1/2 bicchieri di farina
  • 1 e 1/2 bicchiere di zucchero
  • 1 bustina di lievito
  • 1 pizzico di sale
  • 2 cucchiaini di cannella
  • 4 uova
  • 1 e 1/4 bicchiere di olio di semi
  • 2 e 1/2 bicchieri di fragole tagliate e leggermente schiacciate

Preriscaldare il forno a 180°c.

Combinate tutti gli ingredienti secchi. In un altra ciotola combinate uova e olio e poi aggiungete le fragole. Aggiungete gli ingredienti secchi e mescolate ma non troppo, solo fino a quando sono combinati.

Riempite i pirottini e infornate per circa 20 minuti o fino a quando lo stuzzica dente esce pulito.

Frozen Strawberry Rum Yogurt Pie.

Frozen Strawberry Rum Yogurt Pie is easy to make and a fresh dessert for the summer!

Crust

  • 2 cups coarsely crumbled graham crackers
  • 3 tablespoons canola oil

Filling & Topping

  • 3/4 cup heavy cream
  • 1/3 cup sugar
  • 1 cup nonfat vanilla Greek yogurt
  • 2 cups sliced strawberries, divided
  • 2 tablespoons white rum
  • 1 tablespoon lime zest, divided
  1. To prepare the crust: Preheat oven to 350°F. Coat a 9-inch pie pan with cooking spray.
  2. Process graham crackers in a food processor until finely ground. Add oil and process until well combined. Using your fingertips or the back of a spoon, press the crumb mixture into the bottom and up the sides of the prepared pan. Bake until just set, 10 to 12 minutes. Transfer to a wire rack to cool.
  3. To make the filling: Whip cream in a medium bowl with an electric mixer until starting to thicken. Add sugar and continue whipping until stiff peaks form. Gently fold in yogurt.
  4. Puree 1 cup strawberries. Gently fold the strawberry puree, rum and 2 teaspoons lime zest into the yogurt-cream mixture.
  5. Spread the flavored yogurt-cream mixture into the cooled crust. Top with the remaining 1 cup strawberries and remaining 1 teaspoon lime zest. Freeze until very firm, at least 5 hours. To serve, let the pie stand at room temperature until softened slightly, about 15 minutes, before slicing.

Per la crosta:

2 bicchieri di biscotti sbriciolati

3 cucchiai di olio di semi

Per il ripieno:

3/4 bicchieri di panna

1/3 bicchiere di zucchero

1 bicchiere di yogurt greco bianco o vaniglia

2 bicchieri di fragole e pezzetti

2 cucchiai di rum bianco

1 cucchiaio di scorza di lime

Per preparare la crosta preriscaldare il forno a 180°c.

Frullate i biscotti, aggiungete l’olio e mescolate poi versate il composto nella forma scelta e premete con le mani sul fondo e sui bordi. Infornate per circa 10 minuti e poi lasciate raffreddare.

Per il ripieno montate la panna con lo zucchero. Aggiungete poi lo yogurt.

Frullate un bicchiere di fragole, poi aggiungetele al composto di yogurt con il rum e la scorza di lime.

Versate il ripieno sulla crosta e decorate con le altre fragole.

Ponete il congelatore per almeno 5 ore per raffermarsi.

Prima di servire lasciate la torta fuori per circa 15 minuti per ammorbidirsi leggermente.

Strawberry Shortcake

Strawberry Shortcake.

Strawberry Shortcake is a classic cake that everyone must try at least once in their life!

For the cake:

  • 1 1/2 cups (3 sticks) butter, room temperature
  • 1 1/2 cups (300 grams) sugar
  • 6 eggs
  • 1 teaspoon vanilla extract
  • 3 cups (360 grams) all purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup (60 ml) milk

For the filling:

  • 3/4 cup sugar
  • 3X8 oz (670 grams) packages cream cheese, room temperature
  • 1/2 cup strawberry preserve
  • 4 oz cool whip, thawed
  • 2 cups small diced fresh strawberries
  1. Preheat the oven to 350F. Line a 17X11″ baking pan with parchment paper. Set aside.
  2. In a mixing bowl add the butter and sugar. With the paddle attachment on, beat on low speed until light and fluffy, about 5 minutes.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Alternately, add the flour, baking powder and milk, stirring until just combined.
  5. With a spatula, spread the cake batter evenly in the prepared pan and bake in preheated oven for 23 to 25 minutes.
  6. Remove from the oven and let the cake cool in the pan for 10-15 minutes before inverting on a wire rack and cool completely.
  7. While the cake is baking, make the cheesecake filling.
  8. In a mixing bowl add the cream cheese, sugar and strawberry preserve. Beat on low speed until well blended. With a spatula, fold in the cool whip and diced strawberries.
  9. Place in the fridge and cool for about 1 hour.
  10. To assemble the cake, cut the cake on the short side in 3 or 2 equal slices.
  11. Place half of the strawberry filling over the first layer and spread it evenly.
  12. Arrange the second cake layer over the cheesecake filling and top with the remaining filling.
  13. Top the cake with the third cake layer and press gently to level it.
  14. Refrigerate for about 1 hour before cutting into slices.
  15. Decorate the cake with whipped cream and fresh strawberries

Per la torta:

1 e 1/2 bicchiere di burro a temperatura ambiente

300 gr zucchero

6 uova

1 fialetta di vaniglia

360 gr di farina

1 bustina di lievito

60 ml di latte

 

Per il ripieno:

3/4 bicchiere di zucchero

670 gr di formaggio spalmabile

1/2 bicchiere di confettura di fragola

1/2 bicchiere di panna montata

2 bicchieri di fragole a pezzetti

 

Preriscaldate il forno a 180°c. Coprite una forma per la torta con carta da forno e mettete da parte.

In una ciotola lavorate burro e zucchero fino a diventare leggeri e spumosi. Aggiungete un uovo alla volta e poi la vaniglia.

Aggiungete farina, lievito e latte ed amalgamate fino a quando è tutto incorporato.

Infornate per circa 25 minuti o fino a quando lo stuzzica dente esce pulito.

Lasciate raffreddare completamente la torta.

Per preparare il ripieno Lavorate tutti gli ingredienti ( potete non mettere la confettura ) e alla fine aggiungete la panna montata e i pezzetti di fragole.

Lasciate raffreddare il ripieno per circa 1 ora.

A questo punto assemblate la torta e decorate con panna montata e fragole.

Kiwi smoothie:

3 peeled Kiwi.
1 cup frozen Banana slices.
3/4 cup Pineapple juice.
1/2 cup frozen Strawberries.

 

Put all ingredients into blender.
Blend until smoothie consistency is reached!

 

Ingredienti:

  •  3 kiwi pelati
  • 1 bicchiere di pezzi di banana congelate
  • 1/2 bicchiere di pezzetti di fragole congelate
  • 3/4 bicchiere di succo di ananas

Mettere tutto nel frullatore e frullare fino a diventare cremoso.

Dessert super veloce e facile!

 

  • 300 gr circa di fragole
  • 1/2 bicchiere di acqua
  • 1 cucchiaio di zucchero
  • yogurt o panna montata

Tagliate le fragole e mettetele in un pentolino a fiamma bassa con 1/2 bicchiere di acqua. Quando iniziano a riscaldarsi le fragole aggiungete lo zucchero e mescolando fate sciogliere.

Mettete yogurt o panna sul fondo di un bicchiere, aggiungete delle fragole e via dicendo. Se volete potete aggiungere muesli.

1 pint Strawberries
1/2 cup water
1 tbsp sugar
Yogurt (or whipping cream)
Variety of kitchen glasses

 

  1. Slice the strawberries and put into a small saucepan over low heat with 1/2 cup water.
  2. As your strawberries begin to heat up add 1 tbsp sugar and let dissolve while stirring gently.
  3. Add some yogurt or whipped cream to the bottom of a glass dish.
  4. Make as many layers as you want or slide a couple berries down the side of the glass
  5. Top with more sliced strawberries.
  6. This simple dessert idea is so impressive, no one will realize how quickly you put it together!

Tiramisù di fragole – Strawberry tiramisù

Oggi vi offro un’alternativa al classico tirmisù…Tiramisù di fragole!!!

Ingredienti:

  • Savoiardi
  • 1/2 bicchiere  di succo di arancia (circa 110ml)
  • 3 bicchieri di fragole tagliate a pezzi (circa 450gr)
  • 1/4 bicchiere di acqua (60ml)
  • 1/2 bicchiere di zucchero (circa 113gr)
  • 1 bicchiere di panna montata (250ml)
  • 1 bicchiere di mascarpone (250ml)

Directions:

1. Preparate la salsina di fragole mettendo in un pentolino 1 bicchiere di fragole con l’acqua. Quando inizia a bollire aggiungete 1/4 bicchiere di zucchero e far cuocere per 5 minuti. Togliere poi dal fuoco, frullare e mettete da parte.

2. Montate la panna con rimanente zucchero. Poi aggiungetelo al mascarpone.

3. Unite il succo di arancia alla salsina di fragole. Immergete i savoiardi dentro, create uno strato di savoiardi e uno di crema e così via.

4. Lasciate riposare un paio di ore nel frigo e prima di servire decorare con pezzetti di fragole.

* per bicchieri intendo quelli da cucina. Ovviamente in base alla grandezza del tiramisù occorrerà più salsina di fragole,succo,mascarpone e panna, poi vi regolate voi.

Ingredients:

  • 24 lady fingers
  • ½  cup orange juice
  • 3 cups strawberries, sliced
  • 1/4 cup water
  • ½ cup granulated sugar
  • 1 cup whipping cream
  • 1 cup mascarpone

Directions:

 

  1. Prepare strawberry sauce, by heating 1 cup sliced strawberries over medium heat with 1/4 cup of water.
  2. When mixture begins to boil, add 1/4 cup sugar and let simmer for 5 minutes, stirring occasionally.
  3. Take off heat and use a food processor to blend to a liquid. Set strawberry sauce aside.
  4. Whip the cream together with the sugar till you have soft peaks.
  5. Mix the cream together with the mascarpone until you have a smooth mixture.
  6. Mix the orange juice with the strawberry sauce and dip the ladyfingers in the mixture.
  7. Make a layer of the ladyfingers in the bottom of a serving bowl and add a layer of the mascarpone/cream
  8. mixture, repeat ladyfingers and mascarpone mixture.
  9. Leave to stand in the fridge for  2-4 hours before putting on the last layer of strawberries and serve

 

Potete creare anche dei mini tiramisù in piccole ciotoline o bicchieri!
